
Ingredients
90g butter (room temp.) 250g plain flour 25g ground almond 120g sugar 1 tsp salt flakes 1 medium egg (whisked) 100g almonds (whole) 40g dark chocolate (optional) - if you have other ingredients you want to try and swap out, and are a little unsure, do get in touch!

Pre-head the oven at 180°C (fan)
Sift the flour into a large bowl. Rub in the butter with your finger tips or cut in using two forks. Add the ground almonds, salt and sugar and finally the whisked egg. Combine well by hand until it starts to form into a ball. It first starts off quite crumbly but the warmth of your hands will help incorporate it all into one piece of dough.
Lightly bash the blanched almonds in a tea towel with a rolling pin until they are roughly chopped and mix well into the dough.
Separate the dough into two balls. Form each ball into a long, flat sausage on a non stick cooking mat or greased baking trays and cook for 18 minutes until lightly golden.
Remove and allow to cool slightly for about 5 minutes.
With a sharp serrated knife, slice with a slight diagonal angle, about 2cm apart. Turn
each slice on its side (still on the baking tray) and return to the hot oven for a
further 5-7 minutes.
Remove and cool.
Best eaten with a hot cup of coffee or tea.
